Sundried Tomato Pasta

Pasta is always a very great option for lunch or dinner. It is a versatile food that can be cooked in different ways and with a wide range of ingredients. Pasta is liked by people across all age groups. It also comes in many shapes.


Today I am cooking Farfalle Pasta, a bow tie-shaped pasta. Usually, Pasta is cooked with fresh tomatoes. However, I'm cooking pasta with Sun-dried Tomatoes (sun-dried tomatoes are loaded with flavors). In addition, the piquillo peppers and garlic further enhance the flavor of the dish.


Sun-dried Tomato Pasta is a quick recipe and takes roughly 15 to 20 minutes to cook. Once you try these pickled tomatoes in your pasta, you will keep using it time and again as Sun-dried tomatoes infused in oil and garlic adds a peculiar taste.

Ingredients

  • Farfalle Pasta 150 to 170 gm

  • Sun-Dried Tomatoes 70 gm

  • Whole Pickled Peppers 1

  • Chopped Garlic 4 to 5 medium to large cloves

  • Chopped Sweet Red Chili 1

  • Olive oil or oil from sun-dried tomato bottle 3 to 4 tbsp

  • Crushed Black Pepper 1 tsp

  • Cherry Tomatoes 5 to 7

  • Chili flakes 1/2 tsp

  • Salt as per taste

  • Pasta seasoning 1 tbsp

  • Black Olives 5 to 8

  • Parmesan Cheese for garnishing

  • Parsley leaves for garnishing

Sun-dried Farfalle Pasta

Method

  1. Firstly, boil the pasta by adding a little bit of salt to it and when it boils then rinse the water from the pasta. Keep it aside.

  2. Take a deep large pan and heat oil in it. Add chopped garlic and saute it.

  3. Add chopped sweet red chilli in the garlic.

  4. After about 2 to 3 minutes add sun-dried tomatoes along with chopped pickled peppers. Cook on low flame.

  5. Now add black pepper, chilli flakes, pasta seasoning and salt. Mix all well by pressing the sun-dried tomatoes with the help of a ladle.

  6. Now add boiled pasta into the pan and mix it all together. Add a little bit of water if it is too thick.

  7. When the pasta is about to ready then add cherry tomatoes and olives into the pasta and cover it while on low flame for about 5 minutes. Add a little bit of water if it is required.

  8. Garnish the pasta with Parmesan cheese and fresh basil leaves.

Notes/Tips

  1. Add a little bit of water to the pasta if it is needed.

  2. Add a little bit of salt to the pasta while boiling it to enhance the flavours of the dish.

  3. You can chop the sun-dried tomatoes before cooking them.

  4. Add tomatoes as per your taste or requirement.

  5. Oil from sundried tomato can also be used for the pasta instead of olive oil.
