Rice noodles as its name suggests is made from rice and can be a good option as compared to white flour noodles. Rice noodles are the most common in the cuisines of East and Southeast Asia. It has a very unique soft texture which is quite different from normal noodles. Rice noodles can be made in different ways and this is my own recipe which I wanted to share with you, although I cook rice noodles in other ways as well.You can try this recipe as it is very good option for lunch as well as dinner.It is light, healthy and cooked with vegetables and with added chicken stock to give it more flavors.

Ingredients
Rice Noodles
Oil 2 to 3 tbsp
Onions 1
Broccoli 1 (small to medium)
Bell Peppers 1
Garlic half tbsp (crushed or paste)
Salt according to taste
Black Pepper powder half tbsp
Red Chili Or Paprika powder half tbsp
Chicken Stock one cube or fresh (4 to 5 tbsp)
Tomatoes (optional) 1
Cooking Instructions
Place the noodles in a large bowl, cover with hot water and let stand for 3 to 4 minutes.
Rinse thoroughly in cold water and drain.
Now take a wok and add some oil into it.
Add sliced onions and cook it on medium flame for five minutes.
Add sliced tomatoes and cook it for another few minutes.
Now add broccoli and capsicum and cook it on high flame for 3 - 4 minutes, while keep stirring it.
Add black pepper, paprika and salt
Add garlic now and stir it well.
Add chicken stock into it and let it cook for another four to five minutes till the stock dries a bit.
Add noodles into it and mix it well.
Switch off the gas and keep it cover for few minutes.
Rice noodles are ready and serve it hot.
Notes
For chicken stock I cooked chicken with bones (chicken legs) in pan with some salt and when the chicken released its juices then this stock I used in rice noodles.
When we put salt in anything in the beginning of cooking then the food immediately releases it juices.
You can use ready-made Chicken stock cube as well.
