Rice noodles as name suggest are made from rice, unlike the traditional ones which are made of white flour. Rice noodles are most common in the cuisines of East Asia, South Asia and Southeast Asia.
Rice noodles are also becoming very popular in many other countries as the UK and India. They are available fresh, frozen and dried. These noodles come in various shapes, thickness and textures.
My recipe for prawn noodles is very simple and quick to cook. The soft white prawn noodles go very well with the crispy and crunchy prawns. The flavors of chopped garlic and spices make the rice noodles even more delectable.
These noodles are very light and healthy as compared to the white flour noodles. You can make it either at lunch or at dinner.

Ingredients
Rice noodles 200 gm(roughly)
Prawns 300 gm
Soy Sauce 1 tbsp
Garlic chopped 4 to 5 cloves
Red onions sliced 1 medium to large
Green bell pepper 1
Red chili sauce 1 tbsp
Black pepper powder 1/2 tsp
Paprika powder 1/2 tsp
Red chili flakes a pinch
Oil 2 to 3 tbsp
Spring onions for garnishing 1
Salt as per taste
Cooking Instructions
Take a bowl with hot water and soak the rice noodles into it for 15 to 20 minutes approximately.
In a wok, heat the oil in it.
When the oil is heated, add chopped garlic first and saute it for about half a minute while keep stirring it.
Now add sliced onions and bell peppers, saute them on high to medium flame for around two minutes.
At this time add prawns into the wok and cook for another 2 to 3 minutes.
Now add salt, black pepper powder, paprika powder and chili flakes and stir it well.
Add red chili sauce and soy sauce in it.
Add rice noodles at this time and stir it well and cook it on high flame for one to two minutes.
Cover the noodles for one minute on low flame.
Turn off the gas and garnish the noodles with spring onions
Serve them hot !
Notes
If using frozen prawns then defrost them before coking.
You can adjust spices according to your taste.
I used Frank's RedHot chili sauce but you can use any other red chili sauce that you like.
For soy sauce I used Maggie Liquid Seasoning(Tesco), You can also use any light soy sauce.
