Potato is everybody's favourite vegetable. It is so versatile that can be used and complemented with any other vegetable. There are lots of recipes with potatoes in almost all cuisines.
Potatoes are considered to be very healthy and a good source of carbohydrates to provide energy to the body. Packed with nutrients, antioxidants and are naturally gluten free.
Today's recipe of potato is very different and delicious and above all a vegan recipe. This is fusion recipe of potato patties in which boiled potatoes are mashed and then suffused with other ingredients like chickpeas etc. and some spices to shallow fry it.
Tamarind and coriander sauce are used as condiments to compliment these patties without which this recipe is incomplete. Tamarind, good for digestion, tastes sweet and tangy to best compliment this dish.
This recipe of mashed potato cakes is tasty and healthy as it is only shallow fried in a very small amount of oil. You can also deep fried it to make it more crispier.

Ingredients
For patties
Boiled Potatoes 4 to 5
Boiled Chickpeas 2 cans
Onions 1 medium
Green Peas half cup
Salt as per requirement
Corn flour 2 tbsp
Ground Cumin 1 tbsp
Ground Black Pepper 1 tsp
Coriander Powder 1 tsp
Paprika powder 1 tsp
For Tamarind Sauce
Oil 1 tsp
Water 1 1/2 cup
Salt as per taste
Sugar white or brown half cup or as per taste
Cumin Powder 1 tsp
Paprika Powder 1 tsp
Paprika Powder 1 tsp
Muskmelon Seeds 1 tbsp
Raisins 2 tbsp
For Green Sauce
Chopped Coriander leaves 1 medium cup
Green Chillies 2
Salt as per taste
Lemon drops 1 tsp
Finally Yogurt half cup
Method
First of all make the sauces and for tamarind sauce.
Put a pan on the gas stove and add tamarind pulp, water and sugar into the pan.
Cook them on high flame till it starts boiling on.
When the mixture is boiling hot then start adding all the spices into the pulp and mix them well.
Let it cook till it gets little thick in consistency and when the sauce is little bit thick then add raisins into it and cook for another 4 to 5 minutes on low flame
In the end add muskmelon seeds into the sauce.
Green Sauce
In a grinder, put chopped coriander leaves and green chilies and grind them well.
Take it out in the bowl and add salt, lemon juice and mix the sauce well.
Lets keep it aside.
Mashed Potato Patty
First of all, mash the boiled potatoes and knead them like a flour while adding corn flour into it.
When the potatoes are kneaded well then let it aside for 5 minutes.
In a bowl, put mashed green peas and mashed boiled chickpeas.
Now add chopped onions into the green peas and chickpeas.
Add salt and other mentioned spices into this mixture and mix them altogether.
Now take out a shallow pan and add some oil and heat it on medium flame.
Now take a handful of mashed potatoes and roll it with your hands and then add some chickpea mixture in the centre of each potato cake and roll it with hands and then press it gently to make it flat round shaped patty like a hamburger style.
This will take around 3 to 4 minutes.
When all patties are ready then shallow fry them in the pan one by one from both sides until they are crispy and golden brown in colour.
For plating
In a plate, put two patties and pour some yogurt, green sauce and tamarind sauce on the top.
Garnish it with some boiled chickpeas and coriander leaves.
