Ingredients
For Marinate the Butter Chicken:
Chicken 500 gm
Red chili powder 1/2 tsp
Cumin powder 1 tsp
Salt as per taste
Garam masala powder 1 tsp
Black Pepper powder 1/2 tsp
Ginger Garlic Paste (Natco Ginger Garlic) 1 tbsp.
Curd or yogurt 2 to 3 tbsp.
Dried fenugreek leaves 1 tbsp.(hand crushed)
For Gravy
Chopped onions 1 large
Oil or butter 2 to 3 tbsp.
Sliced green chili's 1
Coriander powder 1 tbsp.
Red chili powder 1/2 tsp
Cumin powder 1 tbsp.
Ginger garlic paste 1 tsp
Salt as per taste
Tomato puree 2 large
Fresh cream 3 to 4 tbsp.
Water half cup or as per the consistency
Dried fenugreek leaves 1 tbsp.
Butter cubes 2
Cooking Instructions :
For the grill
For the marinade, take a big bowl and add all dried spices like red chili powder, pepper powder, salt, cumin, garam masala powder and mix all with yogurt, ginger garlic paste and dried fenugreek leaves.
Mix all the above ingredients to make a thick paste and add chicken pieces into it and mix well.
Now keep this marinated chicken pieces in the fridge for about an hour.
Take out the marinated chicken after 1 hour and grill it either on the grilled pan or in the preheated griller.
When the chicken is grilled then take it out and keep it aside.
For the gravy
Take a deep pan and add oil into it. Heat the oil.
When the oil is heated then add finely chopped onions into the oil and sauté it.
Add sliced green chills into the onions and sauté it well.
Add all the dry spices which are above mentioned for the gravy
Then add ginger garlic paste, salt and tomato puree in the pan and cook for about 1 minute.
Now add fresh cream and cook it for 2 to 3 minutes on medium flame and then add water and mix well.
Cook with water for another 5 minutes and then add grilled chicken pieces into it .
Cook the butter chicken until it turns into the thick gravy.
When it is about to ready then add butter and fenugreek leaves at the end.
Pour some cream on the top before serving it.
Serve the butter chicken with Garlic Butter Naan or rice.
Notes
If you want to give it a little sweet taste then you can add a little honey or 1 tsp sugar in it.
You can also add whole spices like bay leaves, green cardamom, black pepper etc.
Adjust spices as per your taste.
