Salads are always considered very healthy food as they are a great source of all vitamins and minerals. In addition, vegetable content makes salads a rich source of fiber.
It is advised to eat at least five types of vegetables and fruits in the diet every day. However, many people find it hard to include vegetables in their diet. Some people do not like salad meals. I also had negative thoughts until I started making and doing experiments with salad recipes. I also try to include as many vegetables in my daily intake as I can. I really wanted to include vegetables and fruits in my diet like Red Cabbage and Avocado but wasn't sure of how to add them.
Although salads are extremely helpful in promoting weight loss yet delivering all the necessary elements that your body needs to maintain a healthy body. So I have come up with Red Cabbage Salad with Chicken in it. This recipe can be enjoyed at lunch and in dinner.
Red Cabbage is very good in Vitamin C & K and great antioxidants which is helpful in reducing the risk of many diseases. This red cabbage salad is tasty at the same time because of marinated chicken pieces in it.

Ingredients for salads
Red cabbage half
Avocado 1
Olives half-cup
Carrots 1 small
Sweet corns half-cup
Lettuce half
Cherry tomatoes half-cup
Lime 1
Hot Pepper Sauce for topping
For Chicken
Oil 2 tbsp
Chicken thighs 250 to 300 gm
Salt as per taste
Yogurt two tbsp
Paprika powder 1 tbsp
Black pepper powder 1 tsp
Cumin Powder 1 tsp
Coriander powder 1 tsp
Ginger Garlic Paste 1tsp
Green Chili paste 1 tsp
Method
In a pan, add 1 tbsp oil. Once the oil is heated, add cut Red Cabbage to it.
Cook it for 4 to 5 minutes from low to medium flame until it gets soft.
Wash and cut all other vegetables into small to medium size.
Use lightly salted pickled olives and cut them into half.
Put all cut vegetables into one bowl with the base of red cabbage and keep them aside.
Now for the chicken marination, in a bowl put all the spices mentioned above along with yogurt and ginger garlic paste.
Add small cut pieces of chicken thighs into the marination and mix all together.
In a pan, pour some oil and heat it, and add marinated chicken into the oil.
Cook chicken for 10 to 12 minutes on medium flame and when it is soft then take it off from the gas.
Add cooked chicken pieces into the salad and top it up with some lime juice and red pepper sauce.
Enjoy this healthy yet tasty salad meal!
