Bread is a major staple food in Turkish cuisine and different types of breads are consumed regularly in breakfast, lunch and dinner in Turkey.Without bread Turkish cuisine is impossible. Breads are eaten with almost everything in Turkey whether eggs in breakfast or with soups or chicken dishes.
Today I am making pide bread, a staple bread in Turkey. This bread is the most favourite bread of Turkish people. It can be considered a national bread of Turkey and is must on the Turkish tables. Traditionally baked in the clay oven but you can bake it at home in your oven easily.
This pide bread is crisp from outside but soft and fluffy from inside. This bread goes great with soups and breakfast recipes. When you visit Turkey, you can easily find this on the street there.
The crunchiness of the sesame and nigella seeds goes really well with this bread.
I have served this bread with the traditional Turkish menemen recipe which is an egg dish famously eaten with this bread for breakfast.
The recipe of menemen can be read in my previous blog and then you can also try this bread at home with the egg dish. Both recipes are very easy and quick to make and can be enjoyed with family and friends.

Ingredients
All purpose flour 350 gm
Lukewarm water 50 ml
Lukewarm milk 200 ml
Yeast 12 gm
Vegetable Oil 100 ml
Granulated sugar 1 tsp
Salt 1 tsp
For the top
Egg 1
Milk 1 tsp
Yogurt 1 tsp
Vegetable oil 1 tbsp
Nigella seeds 1 tsp
Sesame seeds 1 tsp
Cooking Instructions
In a large bowl mix the yeast, milk, water, sugar. Stir all well together.
Now add oil, salt and half of the flour and knead all well.
Now add the remaining flour and mix all together to make a sticky dough.
Knead the dough until it becomes smooth.
Now grease the another bowl with oil, place the dough, cover and set aside for about 45 to 50 minutes.
Take out the baking tray and place the baking paper and sprinkle some flour on it.
Now place the dough on the baking tray with paper under it and start flatten the dough with your palms to give it flat rounded shape.
Take a knife to draw four parrallel lines across the dough to make the criss cross design. You can see the design in the picture on the bread.
Cover the dough with the damp cloth and keep it aside for the 15 to 20 minutes
Preheat your oven to 200 C (392F).
To make the glaze, in a small bowl, combine the egg yolk, milk and yogurt.
Brush the top of the bread with this glaze and sprinkle the sesame and nigella seeds on top surface of the bread.
Bake it in preheated oven for about 20 to 25 minutes or until golden brown in colour.
