Lamb Rogan Josh

Rogan Josh an Indian curry usually made with either lamb or goat meat. Now popular not only in India but also in other countries of the world like the UK. A thick red curry infused in aromatic Indian spices with yogurt and ginger garlic paste is a very popular curry recipe all over the world.


It is one of the signature recipes in Kashmiri cuisine. Although there is a long list of ingredients that go into this recipe but actually it is quite simple to cook.


In this dish, the meat is soft and tender which is cooked in thick aromatic gravy with the sourness of tomatoes and yogurt which goes into it. Nowadays there are many versions of cooking the lamb Rogan Josh but this version is quite simple to cook and also very flavorsome.


You can use either lamb or mutton in this dish. This tasty curry can be enjoyed at any time or usually the perfect dinner recipe with the Basmati recipe and butter or garlic naan.

Ingredients

  • Lamb/ Mutton 800 gm

  • Onions 2 medium

  • Black cardamom 1

  • Bay leaves 2

  • Cinnamon 1

  • Cloves 4

  • Oil 4 tbsp

  • Salt as per taste

  • Ginger garlic paste 1 1/2 tbsp

  • Kashmiri red chili powder 1 tbsp

  • Coriander powder 1 tsp

  • Cumin powder 1 tsp

  • Turmeric 1/2 tsp

  • Fennel powder 1 tsp

  • Ginger powder 1 tsp

  • Yogurt 2 tbsp

  • Tomato puree 2 medium

  • Water 1 1/2 cup

  • Coriander leaves for garnishing

Method

  1. In a large deep pan, put oil and all the whole spices like cloves, bay leaves, black cardamom and cinnamon stick. Saute them.

  2. Add chopped onions and saute the onions till golden brown.

  3. Now add lamb pieces into the onions and mix well.

  4. Cook the lamb for 20 to 25 minutes till it is 80 per cent cooked. Cook on the medium to the low flame while covering it. Add water as per requirement.

  5. Now add all spices like red chili powder, coriander and cumin powder. Add turmeric powder.

  6. Add fennel powder and ginger powder to the lamb. Add salt at this stage.

  7. Cook for another 5 minutes after adding all spices.

  8. Now add yogurt and mix well. Then add tomato puree and cook the lamb for another 10 to 15 minutes on low flame. Add water if it is too thick.

  9. Finally, sprinkle some fresh coriander leaves on the lamb.

Notes

  1. Adjust spices as per your taste.

  2. You can use either Lamb or Mutton in this recipe.

  3. Lamb Rogan Josh can also be enjoyed with Garlic Butter Naan.
