Christmas Roast Chicken Dinner

It is holiday time again and Christmas is around the corner. This is the time of year when families get together to celebrate and relax. To make the best of this time, it is imperative to have best of the food on table to add extra flavors and help family bonds grow stronger.


A Chicken Roast Dinner makes a brilliant Christmas night dinner meal for the family. Chicken is marinated with spice paste (mixed in warm butter) and then roasted in oven for over 1 hour. The spice paste adds tons of flavors to roast and is the star ingredient of this recipe.


In addition to other traditional vegetables to go with roasted chicken, I have cooked tasty-flavorsome and crunchy mushroom recipes to go along with the Chicken. Button mushrooms are marinated in aromatics spices and corn flour. Then, marinated mushrooms are shallow fried until they are crispy and crunchy.

The Christmas Roast Chicken recipe is good fun when cooked with family even more fun eating it together.

Serving: 2 to 3 Cooking Time: 1 hour 30 minutes (approx.)


Ingredients for Roast Chicken

  • Whole Chicken 1 medium

  • Butter 50 gm

  • Garlic granules 1 tbsp

  • Crushed black pepper 1 tsp

  • Chili flakes 1tsp

  • Paprika powder 1 tsp

  • Salt 1 tsp

  • White pepper powder 1/2 tsp (optional)

For Vegetables

  • Carrots 4 to 5

  • Potatoes 4

  • Brussel sprouts 5 to 7

  • Garden peas half cup

  • Water for boiling

For Mushrooms

  • Button Mushrooms 250 gm

  • Garlic granules 1 tbsp

  • Chili flakes 1/2 tsp

  • Paprika powder 1 tsp

  • Salt 1 tsp or as per taste

  • Corn starch 1 tbsp

  • Plain white flour 1 tbsp

  • Oil 5 to 7 tbsp

  • Lemon juice 1 tbsp

  • Water as needed

Preparation for Vegetables

  1. Wash the vegetables. Put carrots and brussels sprouts in one pan and boil them for about 15 to 20 minutes. Rinse it and put it aside.

  2. Cut the potatoes into half and boil them until 70 percent done for about 20 minutes on high flame. Rinse it and apple oil onto them.

  3. Boil the frozen peas for about 10 minutes. Rinse them and keep them aside.

  4. After about half an hour, take out the chicken from the oven and add carrots, Brussel sprouts, peas, and put the chicken back in the oven for the next half an hour with vegetables.

Preparation for Chicken

  1. Put the butter into the pan and warm it on low flame to melt it.

  2. Add all the dry ingredients mention above for the roast chicken.

  3. Apply the mixture/paste all over the chicken and bake it into the preheated oven from 170 to 180 degrees Celsius for 50 to 60 minutes.

  4. After 30 minutes, add the vegetables into the roast tray with Chicken.

  5. Add boiled potatoes into the tray after 40 minutes. Apply oil on the potatoes. Roast the potatoes along with the chicken for another 20 minutes.

  6. When the chicken and vegetables are roasted well then switch off the oven and let it cool down in it.

Preparation for Mushrooms
Wash mushrooms and all the dry ingredients which are mentioned above for the mushrooms with 1 tablespoon oil in them.
Add lemon juice and sprinkle some water if the mushrooms are very dry.
Heat the oil into the pan and add all the mushrooms and shallow fry them until golden brown.
After about 10 minutes on medium flame take the mushrooms out in a tray.

SERVE ALL TOGETHER WITH CHICKEN GRAVY AND SOME BISTRO SALAD!


Notes

  1. Adjust spices as per taste.

  2. Keep basting the chicken and vegetables.

  3. You can use the readymade Chicken Gravy.
