Chicken Bhuna Masala as its name suggests is aromatic, spiced and thick gravy recipe of chicken. This is a north Indian recipe and also very well know across many countries. In this recipe, chicken is marinated first and then added to the Bhuna Masala. Bhuna Masala is made up of sauteed onions with tomato, yogurt and some spices.
There are various methods to cook Chicken Bhuna recipe. Following is my take on Chicken Bhuna Recipe, I hope you will like my version of this mouthwatering dish.In this recipe, chicken is being cooked from high to medium heat until the gravy dries up and masala clings onto the chicken.
The aromatic ginger garlic paste with other dry spices is a perfect combination when cooked with chicken. The spices and other ingredients which goes into this recipe are not very difficult to find and are always present in our kitchens. You can adjust spices as per your taste.
This recipe tastes perfect with both Garlic Naan and Basmati Rice. Chicken Bhuna Masala is not a very difficult recipe, in fact you can prepare it within one hour. It is a very comforting family meal and can be made regularly.

Ingredients
For the marinade
Chicken (Curry Cut) 800 gm
Kashmiri Red Chili Powder 1 tsp
Turmeric Powder 1 tsp
Cumin Powder 1 tsp
Coriander Powder 1 tsp
Garam Masala 1/2 tsp
Salt 1/2 tsp or as per taste
Oil 2 to 3 tbsp
For the Bhuna Masala
Onions 2 medium
Oil 3 to 4 tbsp
Tomato Puree 1 large
Yogurt 3 to 4 tbsp
Cumin Seeds 1 tsp
Fennel Seeds 1/2 tsp
Bay leaves Powder 1 tsp
Coriander Powder 1 tsp
Turmeric Powder 1 tsp
Kashmiri Red Chili Powder 1/2 tsp
Cummin Powder 1 tsp
Garam Masala 1 tsp
Salt as per taste
Fenugreek Leaves 1 tsp (hand crushed)
Water 3/4th Cup
Dry Whole Red Chilies 2
Coriander Leaves for garnishing
Method:
1. Add chicken (curry cut) pieces in a bowl and mix well with the spices mentioned for marinade. Keep this mix rested for 15 minutes.
2. In flat pan, shallow fry the above marinated chicken for 4 – 5 minutes on medium flame. Keep the chicken aside.
To prepare Bhuna Masala
3. In a large frying pan, pour some oil then add cumin seeds, fennel seeds, whole red chilies and bay leave. Sauté these for a minute.
4. Into the above mix, add finely chopped onions. Saute until onions are light golden in color.
5. To above mix, add cumin powder, coriander powder, garam masala and Kashmiri Red Chili and turmeric powder. Mix well and cook for 2-3 minutes on low heat.
6. Add tomato puree and cook for another one minure. Now add yogurt to this puree and cook for 3 – 4 minutes on low heat.
7. Add shallow fried chicken to this mixture. Cook on high - medium flame for 5 minute. Add 3/4th cup of water, cover the pan. Cook the chicken on low flame until chicken is soft and gravy has thickened.
8. Add hand-crushed fenugreek leaves at the end and garnish with coriander leaves before serving.
Serve it with either garlic naan or basmati rice.
Note:
Adjust spices as per taste
You can use paprika powder in place of Red Chili Powder
You can either use boneless or chicken on bones. It is up to you but I have used chicken with bones.
