Christmas is a special festival of the year where family comes together to celebrate. Food is the most important part of Christmas celebrations. A lot of planning and efforts goes into deciding what food to be put on the Christmas Table.
To this easier for my readers, I have come up with a Christmas Spiced Roast Chicken recipe. This recipe introduces a mix of spices on to chicken with mixed herbs and butter to add extra flavors to traditional Christmas Roast Chicken.
Served with the fresh chicken gravy and boiled vegetables like carrots, potatoes which are my favorites with pigs in blanket but you can use your favorite vegetables with your spiced roast chicken. I have also served this dish along pilau rice with fresh Indian whole spices and green peas.
For gravy, the juices from Chicken in the oven tray can be used as gravy. I have used dried mixed herbs in this but you can also use fresh herbs if you want.

Ingredients
Chicken: 1 Medium
Butter: 100 gm
Red Chilies (Medium Heat): 1
Garlic: 7 to 8 cloves
Lemon Juice: 1/2 lemon
Cumin Powder: 1 tsp
Crushed Red Chilies: 1/2 tsp
Black Pepper Powder: 1 tsp
Paprika Powder: 1 tsp
Black Salt: 1/2 tsp
Mixed herbs (dried) 1 tbsp
Salt as per taste
Carrots: 200 gm
Pigs in blanket: 6 to 8
Potatoes wedges: 200 gm
Steps for Paste/Marination
Take out the chicken from the fridge nearly 30 minutes to bring it to room temperature before marinating it.
Melt butter in a small pan.
Make a paste with Garlic, Red and Green Chilies.
In paste, add lemon juice, Cumin Powder, crushed red chilies, paprika powder, melted butter, black salt and table salt.
Mix the above ingredients well.
Make cuts on legs to spread paste under the skin.
Take small portions of above paste and insert it under the Chicken skin with the help of butter knife (spread this paste evenly under chicken skin).
Steps for Cooking
Preheat the oven at 200°C while preparing for the marination.
Now, on marinated Chicken, apply slight layer of butter on top of the Chicken Skin.
You can also rub the remaining paste.
Roast the chicken for 55 - 60 minutes and keep checking in between.
After 30 - 35 minutes baste the chicken (pouring/applying the chicken own juice on it) to avoid drying.
In a separate roasting tray, place potato wedges and Pigs in Blankets. Place this tray in the oven at same temperature for 20 - 25 mins.
For vegetables, boil small carrots in a separate pan.
After 60 minutes, when Chicken skin has turned golden brown. Take out the cooked chicken.
Transfer the Chicken juices left roasting tray into a small bowl.
Serve the roast chicken with boiled carrots, potato wedges, pigs in blanket and Chicken juice.
