Mexican cuisine
Mexican cuisine is the amalgamation of Mesoamerican, Spanish cooking customs and also represents the cooking traditions of the modern state of Mexico. The methods of cooking and ingredients used in this cuisine have roots in the ancient Mayan civilisation where the agricultural communities domesticated Maize.
Maise is a very prevalent ingredient in Mexico, and in fact, many dishes utilise this ingredient to compliment the unique elements within a dish. In addition, Spanish influence is very dominant in
Mexican food culture. Many cooking methods and ingredients were introduced by
Spanish settlers.
The Spanish influence is particularly noticeable in sweet dishes like Churros, Alfeniques, Borrachitos and Alfajores. There are some native foods of Mexico like maise, beans, squash, chia, avocados, tomatoes, vanilla, turkey, spirulina, sweet potatoes, cactus and chilli pepper.

Mexican Chicken Fajita Kebabs
Chicken Fajita is a trendy dish in Mexico and other countries as well. This recipe is straightforward and quick to make. Mexican chicken fajita is a summer delight that people enjoy and cook together with their families.
Anyone can cook this tasty chicken recipe which is also very healthy. These fajita kebabs are different in a way that it carries the Mexican cooking style and use of flavours.
Ingredients
• 4 tbsp fresh lime juice
• 2 tbsp lime juice jest
• 2 tbsp orange juice
• 4 tbsp olive oil, plus more for brushing grill
• 1 tbsp minced garlic
• 1 tsp brown sugar
• 2 tsp chilli powder
• 2 tsp cumin powder
• 2 tsp minced canned chipotle pepper
• 4 tbsp minced fresh cilantro or coriander
• Salt as per taste
• 2 tsp ground black pepper
• 1-3/4 lbs boneless skinless chicken breasts
• 1 large onion
• 3 bell peppers in different colours
Cooking Method
1. In a large bowl whisk together lime juice, orange juice, olive oil, garlic, brown sugar, chilli powder, cumin, chipotle pepper, cilantro, salt and pepper, lime zest to create a marinade. 2. Put chicken pieces in a large resealable bag and then add marinade mixture into the chicken. 3. Rub the marinade over a chicken and keep it in the refrigerator at least for one to two hours. 4. Preheat the grill over medium to high heat at 380 degrees. 5. Thread the chicken, peppers and onion onto the skewers. 6. Place the skewers on the grills and grill about 5 to 6 minutes from each side. 7. When the chicken is lightly golden in colour, then it is ready to serve. 8. Garnish the kebabs with chopped cilantro. 9. Serve it with either tacos or tortilla wraps with Mexican salsa.
