Mexican Rice is famous recipe around the world. Mexican Rice is also known as Spanish Rice, Red Rice or Arroz Rojo. It is one of the main recipes in Mexico and has its place in menus across restaurants in Mexico. Mexican rice and beans recipe can be cooked and enjoyed at home as well.
Mexican Rice is traditionally cooked with White Rice, Garlic, Tomatoes and Onions etc. It is cooked traditionally by sauteing the rice in Skillet with oil until rice is colored golden brown. Vegetable stock or Chicken Broth is then added along with tomatoes either as sauce or puree.
This rice and beans recipe is also famous worldwide and can be seen in many restaurants around the world. Many people like this recipes with Mexican rice but do not know the recipe of it. So I have come up with this simple yet delectable rice recipe for Mexican rice which can be cooked by everyone with simple ingredients.

Ingredients
Rice Basmati 1.5 cup
Red Kidney Beans 1/2 cup
Black Pepper Powder 1 Teaspoon
Chopped Garlic 1 Tablespoon
Tomato Puree 1 cup
Chipotle in Adobo sauce 1 Tablespoon
Sweet Corns 2 Tablespoons
Mixed Dried Herbs 1 Teaspoon
Chili Flakes 1 Teaspoon
Paprika Powder 1/2 Teaspoon
Water or Vegetable Stock 2.5 Cups
Salt As per taste
Lemon Juice 1 Tablespoon
Cumin Powder 1 Teaspoon
Oil 2-3 Tablespoon
Spring Onions For Garnish
Method
Heat oil in a pan. Add chopped Onions, Garlic and saute it till it is slightly brown.
Add Rice and saute for 1 - 2 minute.
Add Cumin, Red Paprika, Black Pepper powder and Red Chili Flakes to the rice. Mix them well.
Add Chipotle in Adobo sauce and tomato puree. Mix them well for about 1 minute.
Add Carrot, Peas, Red Kidney Beans and vegetable to the rice and salt into the rice.
Add lemon juice and water and bring to the boil.
Cover the pan on low flame till rice is soft and water absorbed in the rice.
Put cooked rice into a bowl, sprinkle sweet corns and spring onions for garnish.

Chipotle sauce is optional
You can eat this dish on its own or with any of your favourite dish!
